4 x Easy Egg Recipes

These dishes I cook the night before or first thing in the morning and take to work for morning tea or afternoon tea, If afternoon tea, the kumara dish is lunch or morning tea, if morning tea you can use 1 or 2 eggs instead of 3.

 OK any time of day 

Broccoli and ham omelette

  • 3 eggs (optional to use all the yolks)
  • ham
  • cooked broccoli
  • pepper
  • chop broccoli small. cook in microwave first
  • start browning ham in non-stick pan
  • give eggs a quick stir before putting in pan.
  • add broccoli to pan before egg to cook off extra fluid.
  • add egg and pepper.

Kumara and roast capsicum omelette

  • 3 eggs
  • have capsicum pre roasted ready to go,(I do mine twice a week and have them in fridge ready to go)
  • Kumara (again I have mine precooked in fridge)
  • Mix all ingredients in bowl and add to hot non-stick pan.

**have before 3pm**



Spinach and tomatoes omelette

  • pre heat pan and start cooking tomato
  • Blanch spinach in micro wave by adding small amount of water, I put mine in a coffee cup and cover with saucer.
  • add spinach to egg and put in hot pan

2 minute tasty omelette

  • 3 eggs
  • 1x can sweet chilli tuna

This omlette I cook thin let cool and slice into my salad, giving me my protein.
