Beetroot Salad

Simple to make, with all energizing fresh ingredients. Tastes nice - a great side dish for lunch or dinner.

 OK before or after 3pm

Ingredients

  • 1 raw, peeled beetroot
  • 1 raw carrot
  • 1 apple (not a Granny Smith)

Instructions

  1. Grate the veges (or throw in the blender)
  2. Add chopped fresh coriander, juice of a lime (preferably) or a lemon and some chopped nuts (e.g. 10 raw almonds for protein).

    That's it. Yummy. I double the recipe and have it for several days for lunch and dinner with my protein and other salad veges.
