Mango Salsa

Simple to make, tasty interesting and adaptable. The perfect recipe for adding to seafood dishes or salads.

 OK before or after 3pm

Ingredients

  • 1 ripe mango
  • 1 small red onion
  • 2 tspoons chopped fresh mint
  • 1 tablsp lime juice

Instructions

  1. peel and stone the mango flesh, then chop. Saving any juice.
  2. In a bowl combine all remaining ingredients , add the mango and leave in the fridge for 30 mins then serve .
  3. Add this to chicken or seafood dish to get your protein tick.

Variations: Add chopped mint, substitute red onion for spring onion and add red capsicum for more colour.
