Peachy Chicken Salad

Simple to make, tasty interesting and adaptable. The perfect blend of protein and fibre.

 OK before or after 3pm



  • 3 fresh peaches peeled and cubed
  • 3 cups of cubed cooked chicken breast
  • 1 medium cucumber seeded and chopped
  • 3 tablespoons on finely chopped red onion
  • 6 lettuce leaves


  • ¼ cup white wine vinegar
  • 1 tablespoon of lemon juice
  • ¼ cup splenda
  • ¼ cup chopped fresh mint
  • Pepper


  1. In a large bowl combine peaches , chicken , cucumber and onion.
  2. In a blender add remaining ingredients and process until smooth
  3. Add this to the chicken mixture and toss to coat.
  4. serve in the lettuce leaf
